Apple and walnut French toast bake with Edna Lewis

Inspired by Lewis’ recipe in her “365 Creative Walnut Recipes: The Best Walnut Cookbook on Earth”, her statement that “I have always felt that the people of Freetown were very special. They showed such love and affection for us as children, at the same time asking something of us, and they knew how to help each other so the land would thrive for all….and when we share again in gathering wild strawberries, canning, rendering lard, finding walnuts, picking persimmons, making fruitcake, I realize how much the bond that held us had to do with food” in her 2006 “The Taste of Country Cooking” and a 1971 photograph of Lewis by John T Hill American chef, teacher and author 1916-2006
